This is a great oil to use when making aioli. Personally, I would have liked the mushroom taste just a bit more as the sage does overpower. But, overall this is a great pairing for cooking and salads.

If you are a fan of sage, I highly recommend this oil. I love it drizzled over baked potatoes and look forward to trying it in my stuffing this Thanksgiving. It's also wonderful as a dipping oil with Italian bread.
